Vegetarian

Vegetarian dishes with loads of flavor are a great choice even if you don't always avoid meat.  These recipes are loaded with umami from vegetables, dairy, and eggs.  They make satisfying meals in themselves, or pair them with a tofu steak or other vegetarian main.

It's since evolved into something much bigger than I could have imagined, but as it grew, the focus shifted from inventing dishes to improving classics.
