Amazake Smoothie

Refreshing amazake smoothie with banana and yogurt.

This amazake smoothie is sweet without any added sugar thanks to the magic of enzymes. You can check out my amazake recipe in case you missed it, but I've been using it in all sorts of dishes to add natural sweetness and umami.

For smoothies it has another cool trick up its sleeve. Amazake has a mild banana smell so blending it with a real banana leans right into a flavor that's already there. A dollop of plain yogurt adds protein and probiotics that make this breakfast-worthy, and there's really not much more to it.

The banana version is the base, but add frozen mango, strawberries, or raspberries and you can take it in a variety of directions. If you want it to pack more nutritional punch, a spoonful of whey protein or a dash of calcium powder gets the job done, and I've also taken a page from my breakfast pudding recipe and added some glucomannan to boost the fiber content while thickening this into a pudding.

For busy mornings it's a quick fix that will keep your household fueled through lunch without an ounce of guilt.
