I don't think it's any secret how much I love kabocha squash. It's sweet like a butternut squash, yet the starchy texture makes it more like a fluffy potato. This opens it up to a wide variety of possibilities, from Creamy Mashed Kabocha to Kabocha Salad.
It's also delicious roasted, but planning a holiday meal with multiple dishes requiring time in the oven can be tricky. By par-cooking the squash in a microwave oven, it can be pan-roasted in a matter of minutes, caramelizing the exterior while the interior gets fluffy and sweet.
With loads of garlic and a generous dusting of hard cheese at the end, this easy side dish is loaded with flavor, and you can reheat it in either a microwave or conventional oven just before serving.
