I'm not a huge fan of mayonnaise, but I make an exception for potato salad. Something about the smooth creaminess of boiled potatoes with the silky richness of mayo creates an irresistibly decadent canvas that can be painted with different flavors and textures.Â
It's a regular staple in our household, and whether I'm feeling cheesy, spicy, or sweet, the format offers room to express your wildest culinary desires. I felt feisty tonight, so I went with a raucous concoction of textures and tastes that awaken your senses in all the right ways.Â
Texture-wise, you have the percussive crunch of smoked nuts highlighted by crisp cucumbers, which are brought together by the creamy potatoes and rich, soft-boiled eggs. Not to be outdone, the flavors feature warm five spice, punctuated by the sweet staccato of black vinegar, underscored by the nutty tenor of sesame oil, and an assertive baseline of smoky nuts.

When you say, "smoked nuts", are you talking about what I think you're talking about? The ones in the can with the blue label? Or are there different smoked nuts in Japan? If they're the canned ones, I'm right there with you. It's one of my guilty pleasure snacks. Using it to flavor a dish is brilliant, since it spreads out the salinity. And the guilt! And the pleasure.😅
