    Oatmeal Fried Bananas

    If you're ever tempted to leave your day job by the promise of a leisurely food blogger lifestyle, filled with good food, exciting travels, and time to pursue your culinary passion, go stand in front of a mirror, smack yourself a few times, and pour a pitcher of water over your head. As with most things that sound too good to be true, the food blogger fantasy lifestyle is just that, a fantasy. Like owning any business, it involves hard work (often a seven day work week), sleepless nights, and the stress of not knowing if you'll be able to pay your bills next month.

    Of course the upside is that I'm free to make my own schedule and have the opportunity to travel for work. This past month I've spent my time traveling around Japan meeting clients and visiting family, but unfortunately it's tough getting access to a kitchen with the equipment and facilities to do any serious recipe development work. Next week I'm off on my next adventure and in between I have about a dozen recipes to create, test, photograph and write for some eager clients, not to mention the posts for this blog.

    Cooking is a creative process and I don't know about you, but as I get older, I'm finding my well of creativity looking more and more like the world's oil reserves. Thankfully, inspiration abounds in the world around us, and a bowl of granola with bananas and milk gave me the idea for this dessert.

    These fried bananas are coated in a generous layer of rolled oats and deep-fried, giving them a nutty granola coating. When drizzled with honey and served with dollop of ice cream, they make a simple dessert with a crispy golden crust and warm creamy middle. It's a fun nod to the breakfast favorite, but more importantly it's delicious.

    While you can make this with regular bananas, if you can find them, lady finger bananas work better. That's because they're about half the length of a regular banana, making them easy to coat with oats and fry. If you do use regular bananas, cut them in half to make them easier to work with.

    Oatmeal Fried Bananas

    Units

    Ingredients 

    • 1 bunch lady finger bananas (peeled)
    • ¼ cup all-purpose flour
    • ¼ cup rolled oats
    • 1 egg (beaten)
    • 1 tablespoon honey
    • vegetable oil (for frying)

    Instructions

    • Add 1" of vegetable oil into a pot and heat over medium heat until it reaches 340 degrees F (170C). Prepare a paper towel lined wire rack.
    • Meanwhile prepare 3 bowls with the ¼ cup all-purpose flour, 1 egg, and ¼ cup rolled oats.
    • Dust the 1 bunch lady finger bananas in flour, them dip them in the egg to coat.
    • Roll the bananas in the oatmeal until they're well covered with oats.
    • When the oil reaches 340 degrees F, fry the bananas until the oats are golden brown, then transfer to the paper towel lined rack to drain.
    • Plate the bananas and drizzle with 1 tablespoon honey. Serve with a scoop of ice cream.
