Kale & Cheese Salad

"Addictive" and "umami bomb" aren't usually words associated with kale. However, this easy kale salad fits both descriptions thanks to a dressing that plays up the best parts of this cruciferous veggie while smoothing out its rough edges.ย 

The contrast of the fruity twang of the apple cider vinegar with the salty punch of the Pecorino Romano is an addictive combo that keeps your tastebuds begging for more. It's a dressing that might overwhelm more delicate greens like lettuce, but the robust structure and mildly bitter taste of kale make for the perfect canvas for this nutritious yet truly tantalizing salad. 

Best of all, kale is such a hearty leaf that this salad is best prepared in advance and can be stored in the fridge for up to a day. I served this as a side salad, but you can easily turn it into a more substantial meal by adding some nuts and grains like cooked quinoa or farro.ย

    I never would have thought to dress the salad in advance, but it makes perfect sense with kale. I'm not a big fan of raw kale, but this might just be what it takes to get me on board. Bacon would also help!๐Ÿฅ“๐Ÿฅ—๐Ÿ˜‹

      Great idea adding bacon Kathy! I was never a huge fan of kale salads either. I also generally don't like salads that have been sitting in dressing, but this is one where it helps breakdown some of the fiber and pectin so it's not like munching on plastic wrap. Because the leaves are so frilly, they don't wilt or get soggy.
