
This easy chicken dish builds on techniques I introduced in my Crispy Chicken with Ginger Sauce recipe. While it may look similar, the flavor profile is warm and spicy, with flavors that tie together flavors from along the Silk Road.
The chicken is marinated with garlic and coriander seed before being pan-fried until the skin is crackling crisp, yet the meat is still juicy. It's delicious as is, but the cilantro sauce adds a refreshing burst of flavor that's tangy, nutty, and mildly spicy.
I like to serve this with a side of rice, but it also works well in tacos, sandwiches, or even with a side of mashed potatoes.
