This easy noodle stir-fry is like a mashup of Mongolian Beef and Yaki Udon. With loads of veggies and thick, chewy udon noodles stir-fried with a savory, sweet, and spicy sauce, it's an easy one-pan meal that makes for a tasty lunch or quick weeknight dinner.
The primary time saver here is having some frozen pre-boiled udon noodles in the freezer. I know it may sound crazy, but these noodles usually have a better taste and texture than uncooked dried, or pre-cooked refrigerated udon, and they rival fresh handmade udon. Since they're cooked before being flash-frozen, all you need to do is defrost and heat them up in order to enjoy them.
Of course, you can make this with other types of udon, but you'll need to cook them according to the package/recipe directions before adding them to the stir-fry.
