This crazy-sounding mashup was inspired by my daughter, who asked for both kimchi jjigae and spaghetti with meat sauce for dinner. Some might consider this a troublesome request, but I saw it as a challenge!
We didn't have all the ingredients to make kimchi jjigae, but we did have some beautifully ripe tomatoes and tangy mature kimchi... The result was something that purists (on both sides) would probably thumb their noses at, but it was a novel dish that was equally familiar and comforting.
You'll get the best flavor out of this if your kimchi is mature, but it will also make the sauce quite tangy, so be sure to use ripe tomatoes or a canned/jarred sauce on the sweeter side. You could also add a squirt of ketchup or honey to help balance the tartness out.
