Chicken & Broccolini Stir-Fry

This chicken and broccolini stir-fry is a perfect example of the principles I've been exploring in my "Why Japanese Meals Work" series over on Substack. It fits seamlessly into an ichijū-sansai (one soup, three dishes) meal structure, balances protein with an equal amount of vegetables, and delivers the kind of deep, satisfying flavor that comes from layering umami. The chicken brings richness, while soy sauce, sake, oyster sauce, and mushrooms build on that foundation to create a dish that tastes complete, despite its simplicity.

What I love about these kinds of simple stir-fries is that most of the prep can be done ahead of time, so at dinner time, this comes together in about five minutes of stove time.

The marinade does multiple jobs at once: soy sauce and sake season the chicken and add umami, grated ginger contains enzymes that naturally tenderize it, and potato starch seals in moisture while giving you a sauce that thickens into a glossy glaze.

The best part is that this is an easy framework for stir-fries in general. Marinate a protein with flavorful seasonings along with some starch. Mix some seasonings together with stock to create an umami-packed sauce. Prep about an equal amount of vegetables relative to the protein. Then stir-fry it. Once you understand this pattern, you can swap in whatever protein, vegetables, and seasonings you have on hand.

    I totally love this part of balanced cooking. In the next few weeks, I'll purchase some Gai Lan, the broccoli cousin, as I have a family member who abhors broccoli and cauliflower from a childhood trauma where they were forced to eat it during a school lunch, so using a cousin item with better flavors to this person's palate will help while staying healthy. And I love that these recipes are among the ones I reach for. I might have to start telling my family here about these wonderful recipes, so they can subscribe to your easy, effortless way to produce good food with fewer health issues.
