Potato salad is a popular dish in Japan, and while its contrast of textures and colors makes it a good side dish, it's not something that I'd want to eat a whole plate of.
When this potato salad hits the table, I have difficulty restraining my impulse to devour the whole thing. The combination of the salty pecorino, fragrant fried onions, and rich soft-boiled eggs make it insanely decadent. At the same time, the generous helping of tangy mustard keeps it from feeling too heavy or cloying.
It's the perfect accompaniment for grilled meats such as lamb chops or sausage, and it also goes beautifully with a rotisserie chicken.
