After making my Japanese Toasts video last week, I had some mentaiko left over, and I also happened to have a few bunches of scallions past their prime. Along with some cheese and a few ingredients to bind it all together, I turned the leftovers into these delicious savory pancakes that are somewhere between a Jeon and pizza.
The cheese melts and eventually crisps on the outside to make a delectable crust broken up by strands of sweet scallions and bits of salty and spicy mentaiko. I used thin Japanese scallions for this, but if yours are thicker than ¼-inch in diameter, I recommend cutting them at an angle no thicker than ¼ inch, so they cook through evenly.
