    Easy Marinated Bell Peppers in a bowl

    Somewhere between a pickle and a stir-fry, this easy side makes for an excellent accompaniment for fish, a topping for salads, or a contrasting stuffing for a sandwich. It's also an easy way to add a splash of color and contrasting taste to a bento box lunch.

    The great thing about this is that the general method and ingredients work for almost any firm vegetable or mushroom, like carrots, okra, or shiitake mushrooms. The only thing you may need to adjust is the cooking time and salt.
