The celery adds a fresh herbal flavor that compliments the sweetness of the pear while salting it eliminates excess moisture and transforms its texture. After being squeezed, the celery becomes more crunchy, giving it a textural contrast to the crisp, juicy pear.
I used a tart and fragrant Japanese citrus called sudachi, but any tangy citrus like limes or Meyer lemons would work well. Try serving this topped with my Soy Sauce Roasted Walnuts for another texture and a little more substance.
