This is an idea I've had rattling around in my head for years, but blackberry jam is impossible to find in Japan, and on the rare occasion I've been able to buy fresh blackberries from Costco, they haven't lasted long enough to turn them into jam.
Last October, I was out in Oregon to give a lecture, and I was gifted a few jars of blackberry jam, so after daydreaming about this for at least five years, I was finally able to turn it into reality. But did it live up to the hype in my head?
Well, it's not going to change anyone's world, but it's pretty darned delicious, and it spawned some other ideas. Next up: blackberry quesadillas... or perhaps a blackberry stuffed monte cristo sandwich.

Ingredients
- 4 slices crusty bread
- 2 tablespoons butter softened
- 2 tablespoons blackberry jam
- 75 grams Gouda cheese shredded
Instructions
- Slice the bread into four ½-inch slices. Consider how the bread will fit together to make two sandwiches and line the bread up, so the outside surfaces are facing up. Divide the butter between the bread and spread an even layer on each slice.
- Flip 2 slices of bread over and spread a tablespoon of blackberry jam on each one.
- Top the jam with the shredded Gouda and then sandwich with a piece of buttered bread with the butter facing up.
- Pan-grill the sandwiches over medium-low heat. You'll want to use a sturdy spatula to press on the sandwiches to ensure the bread browns evenly.
- Once the bread is browned and crispy on one side and the cheese starts to melt, flip the sandwich over and brown the other side.
- Slice and serve immediately.
