Quesadillas are the perfect quick and satisfying meal, but they're also a versatile form factor that can be customized with your favorite flavor combinations. As we head into Fall, apple season is in full swing, and apples with blue cheese and walnuts are one of my favorite combos. This apple and blue cheese quesadilla makes for a delicious snack, along with a frosty mug of your favorite autumn ale.
Pan-fried in butter, the crispy, golden-brown tortilla shatters like delicate pastry, revealing a warm, gooey interior where savory blue cheese contrasts with the sweet, tangy crispness of fresh apples and the earthy bite of walnuts.
Butter gives the tortilla a flaky, crispy texture reminiscent of pie crust, and mandolining a thin layer of apples between the salty cheese provides a wonderfully crisp, sweet, and tangy contrast.
It's a delicate balance of sweet, savory, tangy, and nutty, all wrapped up in a rich, buttery package.
While using all blue cheese would taste great, it tends to melt like butter and run all over the place, so I like combining it with a mild melting cheese like Gouda, Fontina, or Monterey Jack. This gives you a beautifully stretchy center with that distinctly funky blue cheese flavor.
