Pan Fried Cabbage Steak

Ingredients 

  • 1 head cabbage
  • 7 grams garlic thinly sliced
  • 2 tablespoons olive oil plus more for drizzling
  • ½ teaspoon salt
  • balsamic vinegar

Instructions

  • Cut a 2 ½-inch-thick (6.5-centimeter) steak from the center of 1 head cabbage.
  • Use your fingers to gently spread the leaves apart, then tuck 7 grams garlic slices evenly between the layers on both sides of the cabbage steak.
  • Place the cabbage steak in the pan and drizzle 2 tablespoons olive oil evenly over the top. Sprinkle on half of the ½ teaspoon salt, flip the cabbage, then season the second side with the remaining salt.
  • Set the pan over medium heat and cook until you hear the cabbage start to sizzle. Turn the heat down and let it slowly pan-fry until the first side is lightly browned, about 15 minutes.
  • Flip the cabbage and continue pan-frying until the second side is lightly browned. The cabbage will release some liquid, but this is fine.
  • Turn the cabbage so the stem side is facing the pan.
  • Keep flipping and frying the cabbage until a skewer passes easily through the thickest part. If the cabbage starts browning too quickly, lower the heat and add 1 tablespoon of water. You can also press down on the stem area with a spatula to help it cook through faster.
  • The goal is a cabbage steak that's tender in the middle and caramel brown on all sides. This will take about 1 hour and 15 minutes.
  • Cut the cabbage steak into serving-sized portions, then drizzle with additional olive oil and a bit of balsamic vinegar before serving.
