Ingredients 

  • 450 grams chicken wings
  • 500 grams napa cabbage cut into ~2-inch squares
  • 3 cups water
  • ¼ cup sake
  • ½ tablespoon salt
  • 2 scallions chopped for garnish
  • Yuzu peel or lemon thinly sliced for garnish

Instructions

  • Put the chicken,  water, sake, and salt into a pot with the lid and bring to a boil.
  • After it comes to a boil, skim off the scum that floats to the surface.
  • Add the napa cabbage, and cover the pot with the lid.
  • Adjust the heat to maintain a gentle simmer and cook for 20 minutes.
  • Serve the soup garnished with chopped scallions and yuzu zest.
