- 450 grams chicken wings
- 500 grams napa cabbage cut into ~2-inch squares
- 3 cups water
- ¼ cup sake
- ½ tablespoon salt
- 2 scallions chopped for garnish
- Yuzu peel or lemon thinly sliced for garnish

Put the chicken, water, sake, and salt into a pot with the lid and bring to a boil.
After it comes to a boil, skim off the scum that floats to the surface.
Add the napa cabbage, and cover the pot with the lid.
Adjust the heat to maintain a gentle simmer and cook for 20 minutes.
Serve the soup garnished with chopped scallions and yuzu zest.
